All Byzantine Coffee is air roasted with renewable energy. Air roasting uses hot air to gently agitate the coffee beans and bring them to the desired degree of roast. Air Roasting allows you taste the coffee, not the roaster's odor, fuel, chaff, and smoke. This enables air roasted coffee to exhibit the full flavor profile of the coffee. Conventional roasters add acidic flavors and bitter tars because of the excess dust and chaff is roasted along with coffee. But those elements are removed during air roasting, ensuring a clean taste that is intensely aromatic.
This allows the subtle, sweet flavors of the coffees to naturally shine through while using a renewable energy source rather than fossil fuels.
